Wildspice® Juniper Smoking Brine

Wildspice® Juniper Smoking Brine is specially crafted for brining chicken, turkey, game birds, pork, venison, wild boar or beef prior to hot smoking, roasting or grilling. Great for curing pork loins for Canadian Bacon! Aromatic juniper berries are blended with spices, pure kosher salt and other natural ingredients for a perfect brining experience. Just mix with 1 quart boiling water, stir for 30 seconds and pour in 3 quarts of ice water. The brine is ready! Brine your item from 6 hours to overnight and roast, grill, or hot smoke.

Our Juniper Smoking Brine is nitrite and nitrate-free, and contains all natural ingredients. It is intended for use with meats that will ultimately be hot cooked, roasted or grilled to safe internal temperatures when served. Therefore this brine is not suitable for use in bacon processing or cold-smoked salmon. 18oz bag.

Directions:

1. Boil one quart of water.

2. Pour boiling water into a plastic or stainless steel container large enough to hold one gallon of marinade and the meat, poultry or game.

3. Add contents of this package and stir to completely dissolve.

4. Add three quarts of cold water to the dissolved mix.

5. Submerge meat in brine. Weighting with a clean dinner plate will help hold it down.

6. Cover and allow to marinate in the refrigerator according to times shown below:

Chicken

 18-24 hrs

Game hens

 12-16 hrs

Pork or feral hog loin/shoulder*

 5-6 days

Whole 16lb turkey*

 5-6 days

Other cuts of poultry, meat or game

 18 hrs

*Large cuts of meat or a whole turkey may require 2 packages of Wildspice® Apple Honey Marinade, for a total of 2 gallons, to completely submerge when marinating.

7. Rinse the meat in cold running water, then grill, roast, braise or hot smoke to perfection!
